MOONG DAL HALWA RECIPE | HAPPY NEW YEAR 2015

MOONG-DAL-HALWA
Moong dal Halwa is an awesome North Indian sweet . I have tasted this few times in my friends house but never attempted to make it on my own. I wanted to post a nice and exotic sweet recipe for New year 2015 and tried this before coming to India for vacation. I clicked the pictures and posting now from India. I wish all my readers a  very Happy New year 2015. Let this year bring lot of prosperity and abundance in all positive ways . Thank you for the continuous support and i will give my best to give more nice and detailed recipes in this year 2015 also.
 I adapted this recipe from Tarla Dalal cookbook.


Moong dal Halwa

  Preparation Time : 10 mins | Cooking Time : 45 Mins |Serves: 5-6

      Yellow Moong dal    1 cup
      Sugar     1 cup
     Ghee     6 tblsp
     Saffron    few strands
     Almonds    4-5
     Cardamom powder   a pinch (optional)
     Milk       1 cup 
      
         

MOONG-DAL-HALWA
Method:
  • Soak the moong dal in water for 4-5 hours.
  • Drain the water completely.

  • Grind this into a paste without adding any water. You can grind this little coarsely too. LAter only i came to know about that through my co sister. 

  • In a pan melt the ghee and when it is hot add the ground paste and saute this in a low flame.

  • Saute this till it turns golden brown. Initially it will become slightly a whole mass and gradually it will get separated .

  • Meanwhile warm the milk and take 1 tblsp from this and soak the saffron in it.
  • Add the rest of the milk to the sauted moong dal.
  • Cook in a a low flame to get the milk absorbed. Add the saffron to this too.

  • Add sugar to this and cook till the milk get absorbed. add cardamom powder if you want at this stage. Slice the almonds thinly and garnish the almonds to the halwa.

  • Serve it hot or warm.

Notes:
  1. Many people add khoya to this to make this more richer. If adding khoya ,scramble the khoya and add it after adding milk.
  2. Condensed milk can be replaced with milk and sugar. This gives an awesome rich flavor and taste to the halwa.
  3. A non stick pan works out wonderful for this halwa.

PUPPY FACE COOKIES RECIPE | EGGLESS COOKIES

Puppu face is a normal plain eggless cookies bu the shape only look like a puppy. It is easy to decorate the cookies with easily available ingredients.Surprise your kids with this cute cookies. I made for the Christmas party at kids school. All the kids were super excited and happily had this cookies. I got this idea through a reader who sent me this cute pictures for her daughter and asked me to give it a try. On the moment i saw these i decided to make it on the next day. I took the plain cookies recipes from my Pinwheel cookies recipe and few you tube links showed me how to make the puppy face. Try this out for this Christmas and enjoy the cookies.


Puppy face cookies

  Preparation Time : 20 mins | Cooking Time : 15 Mins |Makes: 20 cookies

     Plain flour    1 cup
     Butter        1/2 cup
     Vanilla essence  1/4 tsp
     Sugar    1/4 cup
     Chocolate  chips   few
     Chocolate vermicelli  few
     Salt     a pinch
     Chocos     few   



Eggless-cookies
Method:
  • Add powdered sugar and butter in a bowl. Mix this well.
  • Add this mixture to flour and add vanilla essence.
  • Mix well and make this into a pliable dough. If needed add few drops of milk while kneading.
  • Knead this into a smooth dough.

  • Make equal sized balls with the dough. Keep the chocolate vermicelli for the eyes of the puppy and chocolate chip for the nose.

  • Keep the Chocos for the ears and repeat this for the rest of the dough.
  • Keep the cookies in a baking tray lined with parchment paper.

  • Bake this in a preheated Oven for 10 to 12 minutes at 160 degrees C.
  • Allow this to completely cool.

  • Even if you feel the cookies are slightly soft, don't worry, it will be crunchy once it is cool

VAZHAITHANDU SOUP RECIPE |BANANA STEM SOUP

vazhaithandu-soupVazhaithandu or Banana stem is a very healthy veggie and we make curry out of it and also morkootu with vazhaithandu. I wanted to try out soup for a long time and made it few months ago for the Kungumam thozi supplement book. It turned out very well and this veggie is quite healthy and very good for weight watchers too. Try this  clear soup and start your dinner or lunch in a healthy way.
 I am right now in India enjoying my vacation and so millet recipes will resume on all Mondays from the New year. I am totally enjoying here meeting all my old friends, watching movies, eating out, and spending time with family. Will write some interesting stories of my vacation after i am back to Singapore.




    Vazhaithandu Soup

  Preparation Time : 15 mins | Cooking Time : 20 Mins |Serves: 3-4

     Vazhaithandu ||banana stem  1 small size

     Onion      1
     Bay leaf     1
     Butter |ghee  1 tsp
     Cumin seeds     1/4 tsp
     Yellow moong dal   1 tblsp
     Salt   as needed
     Black pepper   to taste

Method:

  • Cut the banana stem and onion into big cubes. In a pan add ghee or butter and add the bay leaf, Add in the cumin seeds and onions and saute till they turn pink. 
  • Add the cut vazhaithandu and saute for a minute.

  • Add in the moong dal and add 1 cup of water and pressure cook all till 2 to 3 whistles.
  • Allow this to cool and discard the bay leaf. Grind this into a smooth paste.

  • Add 2 cups of water and filter the ground paste. Throw out the residue. 
  • Add salt and pepper powder to this and boil this for 3 to 5 minutes.

  • Serve the soup hot.

Notes:
  1. Moong dal gives thickness to the soup and so no need for any cornflour to give thickness.
  2. You can add garlic pods to enhance the flavor, add this while cooking this in pressure cooker.
  3. If adding ginger add while cooking and discard while grinding. Else the flavor of ginger will be dominant.

HOMEMADE CHAI MASALA | TEA MASALA RECIPE

Chai-masala
Tea masala | Chai masala is an aromatic masala, added in Indian tea. I have seen in many Northindian friends house, they keep the chai masala and their tea will always be awesome. I have already posted how to make tea in this Indian Kitchen basics series. Suresh is not a big fan of masala chai but i love mild masala added to chai. I was looking for a perfect recipe for tea masala. I have tried few store bought brands too but all turned out bit spicy and too strong.
I saw the recipe in show me the curry and thought i will give it a try. Wow i got the perfect chai masala recipe. Try this out at home and i am sure you will love this masala tea.

Chai masala

  Preparation Time : 10 mins | Cooking Time : Nil |Makes: 1/4 cup

     Cardamom | Elachi    15
     Dry ginger |Sukku    a small piece
     Black pepper powder   1/2 tsp
     Cloves |Krambu | Laung        10   
     Cinnamon       a small stick
     Fennel seeds    1/4 tsp   (optional)

Method:
  • Heat a pan for 2 minutes and switch it off. Do not roast in pan
  • Put all the ingredients in the pan for a minute and take it out. If you get good sunlight in your place just keep it under sun for 30 minutes.

  • Grind this in a dry mixer until it becomes a fine powder.
  • If you want you can sieve this masala. I didn’t sieve the masala.

  • chai masala is ready. Keep this in an airtight container. While making for 2 people add a pinch of chai masala . It will be very flavourful.
Tea-masla
Notes:
  1. If the spices are kept in the freezer take it out and allow the water to ooze out. Pat dry completely and then make a powder. Else it become moist while grinding
  2. Store the masala in air tight container. Use clean dry spoon or hands to take out the masala.
  3. A pinch is enough for chai for 2 people. Using more will spoil the taste.

VANILLA TEA CAKE RECIPE | EGGLESS BAKING RECIPES

Tea-cake 
Vanilla Tea cake is a new recipe introduced to me by my cousin. Few days back she sent to me the picture of this eggless tea cake through what's app. I asked her the recipe and she sent to me by mail. She told that she got the recipe from her friend. I just tried this cake last week and it taste super yum. It was super soft and mild in sweet and perfect for a Tea time snack. If interested check out my


Vanilla tea cake

  Preparation Time : 15 mins | Cooking Time : 20-25 Mins |Serves: 3-4

     Maida | Plain flour      1 cup
     Fresh cream         1/2 cup
     Milk Powder        1/2 cup
     Sugar                1/2 cup
     Baking soda      A pinch
     Baking Powder     1 tsp
     Vanilla essence     1 tsp 


Eggless-tea cake
Method:
  • In a wide bowl add the flour,baking soda , baking powder and milk powder. Sieve this for even mixing.
  • Beat the fresh cream and sugar . I just put in the mixie and whipped once.

  • Add the cream and sugar mixture to the flour mixture. Mix this evenly. If you feel the mixture is very thick add 1/4 cup of water or milk.
  • I used the nestle cream and it was thick, so i added milk to make it slightly loose.

  • Transfer this to a greased baking tin. I used my bread pan. If you want you can use the cake tin too.
  • Bake this in a oven at 160 degrees for 20 to 25 minutes. Insert a tooth pick in the center and if comes out clean, then the cake is done.

  • Allow this to completely cool and slice the cakes.
  • Enjoy the tea cakes.
    Vanilla - tea cake

Notes:
  1. You can add tutty fruity to the cake to enhance the taste.
  2. I have not experimented by replacing cream with butter or with any other substitute for milk powder.
  3. The cream makes the cake more softer and tastier.

KUTHIRAIVALI TOMATO RICE | MILLET RECIPES

Kuthiraivali |barnyard millet |Odalu in kannada|Jhangora in hindi, is a healthy millet and i have experimented few interesting recipes with this millet and will be posting the millet recipes every monday. I have made a supplement book for Managayr Malar a popular Tamil magazine themed Millet recipes. This book will be published today DEC15-31 edition. I have tried this Kuthiraivali tomato rice and it was very nice and we couldn't feel any odd taste too. Perfect to pack for lunch box too. I used the similar recipe as of my thakkali sadam.


Kuthiraivali tomato rice

  Preparation Time : 15 mins | Cooking Time : 15 Mins |Serves: 1

     Kuthiraivali rice  1/4 cup
     Onion      1 (small size)
     Tomato    1 (small)
     Sambar powder   1/4 tsp
    Turmeric powder    a pinch
    Garam masala       a pinch 
    Oil     1 tsp
    Mustard seeds   1/8 tsp
    Salt     to taste
    Curry leaves    few 
    

Tomato-rice
Method:


  • Soak the rice in water for 15 minutes. Cook the rice with 3/4 cup of water by adding salt and few drops of oil . Cook in a low flame.You can cook this in an open pan itself. Once the rice becomes soft and the water dries up switch off the flame and spread the rice on a plate.

    • In a pan add oil and add in the mustard seeds and curry leaves. Add the finely chopped onions and saute till they become pink.
    • Add the chopped tomatoes and add in the sambar powder, turmeric powder and salt.

    • Cook in a low flame till the tomatoes become mushy. Add in the garam masala in the last.
    • Add in the cooked kuthiraivali rice and mix gently. Keep  the flame low .

    • Kuthiraivali tomato rice is ready to serve. Serve with any raitha or a simple fried appalam or vadam.
    Barnyard millet-tomato rice
    Notes:
    1. Do not over cook the millet and make it mushy.
    2. You can add ginger garlic paste in the beginning to enhance the flavour.
    3. Green chili can also be added in the seasoning if you want this little more spicy.
    4. Pav bhaji masala can be replaced with garam masala.
