KUTHIRAIVALI TIKKI RECIPE | MILLET RECIPES

Kuthiraivaali tikki
Kuthiraivali | kudravali millet , called as Barnyard millet in English| Odalu in kannada|Jhangora in hindi, is a fibre rich millet. I have tried few recipes with this barnyard millet and they all turned out very well. To make it interesting for kids i made tikkis|vegetable cutlets with millets and it was very nice. If you do not get this millet at your place, try with samai, thinai or varagu too. Samba rava too comes out perfectly. A healthy and perfect snack for kids and also for diabetic patients too. Kuthiraivali Tikki

  Preparation Time : 10 mins | Cooking Time : 10 Mins |Yields: 10

     Barnyard millet | kuthiraivali   1/2 cup
     Carrot      1
     Green Peas    1/4 cup
     Red chili powder   1/2 tsp
     Cumin powder    1/4 tsp
     Chaat masala    1/4 tsp
     Garam masala    2 pinches
     Coriander leaves   few
     Salt    as needed
     Oil   2 tblsp  


Barnyard millet-tikki
Method:

  • Soak the kuthiraivali rice for 15 minutes and in the mean time cut the carrots into very fine cubes. I used frozen peas.
  • In a pan add the soaked rice, carrot and peas . Add 1 cup of water and add salt. Cook in a low flame till the water drains and the veggies gets completely cooked. Let this be dry and not watery. If you feel it is watery cook for some more time till it becomes dry .

  • Add the red chili powder, garam masala, cumin powder,coriander leaves, salt and chaat masala. Since chaat masala contains salt add little salt.
  • Mix well nicely.

  • Make it into equal sized balls . Flatten this into tikkis. Cook in a tawa and add little oil to each tikkis.

  • Cook in medium flame on both sides till both sides become golden brown.tikkis
  • Kuthiravali tikki is ready to serve. I served with green chutney. These tikkis were very delicious and quite healthy tea times snack too.

Notes:
  1. Always ensure the cooked mixture is dry without any water.
  2. You can add corn kernels,grated beetroot, broccoli,potato and even scrambled paneer too.
  3. If still  feel the mixture is wet add 1-2 tblsp of maida | corn flour|powdered corn flakes| coarsely powdered peanuts
  4. Finely chopped cashew nuts can be added to the mixture.
  5. Boiled peanuts can be added if your kids like it.
  6. You can make this with Smaba wheat rava or any other type of millet too.

MICROWAVE MASALA PEANUTS RECIPE | INDIAN MICROWAVE RECIPES

Masala peanuts is an quite addictive snack. I have posted a deep fried version of Masala peanuts but this is a low fat version of making in microwave. It is quite addictive and a perfect tea time snack too. Sometimes if you run out of veggies this can be had with sambar rice or curd rice too. Try out this microwave version of salted masala peanuts (a guilt free low fat snack) and enjoy your Tea time. I adapted this recipe from Nisha madulika's video.

Microwave masala peanuts

  Preparation Time : 10 mins | Cooking Time : 7-9 Mins | Yields: 1/2 cup

     Peanuts    1/2 cup
    Besan | kadalai maavu   4 tblsp
    Red chilli powder     1/4 tsp
    Garam masala     2 pinches
    Salt   to taste
    Oil         2 tsp
   Chaat masala   1/4 tsp
   Cooking soda    a pinch
   Water    2-3 tsp

Method:

  • In a wide vessel add the besan, chili powder, garam masala ,salt and baking powder. Wash the peanuts and drain the excess water.

  • Add the besan mixture to the peanuts and coat the masala evenly.

  • Sprinkle little water and add the oil and mix it well to make an even coating.

  • Spread this in a microwave safe plate and microwave high for 3 minutes. Stir in between.
  • Again microwave in high for 3-4 minutes till it becomes crispy. Be  careful as it may burn soon. Open and stir in between. Once done take it out and sprinkle with chaat masala and mix well.

  • Microwave crispy peanuts are ready to eat. I had with Ginger cardamom tea on a rainy day evening.

Notes:
  1. Addition of spices is truly of your choice.
  2. You can add amchoor powder, fennel powder too.
  3. Timing varies from microwave to microwave.
  4. As chaat masala has salt in it add salt accordingly.

PANEER FRIED RICE RECIPE | INDIAN STYLE FRIED RICE

Indian-style fried ricePaneer fried rice in Indian style is a super hit recipe in my house and i often pack this for kids lunch box. So i never happened to click this paneer fried rice in morning hurry . Yesterday i made this in the afternoon as kids took pasta for lunch box.. I had paneer fried rice for lunch and kids had this after they are back from school. This is a simple and easy recipe and never fail to please your guests too.

Paneer Fried Rice

  Preparation Time : 10 mins | Cooking Time : 20 Mins |   Serves : 2-3

     Basmati rice  1 cup
     Paneer cubes     15
     Carrot    1
     Cabbage   little
     Capsicum    half
     Green peas    2 tblsp
     Pepper powder   1 tsp (adjust to taste)
     Salt    as needed
     Green chili  1-2
     Sugar     1/2 tsp
     Garlic    3
     Spring onion   few  
     Oil    2 tblsp        
    

Paneer-fried rice
Method:

  • The main key is to cook the rice perfectly into separate grains. Refer my post on how to cook basmati rice.
  • Cut the veggies according to your preference.
  • Soak the paneer cubes in hot water.

  • In a pan add oil and saute the paneer cubes till golden brown. This step is optional.
  • Keep it aside.
  • In the same pan add finely chopped garlic,slit chili, sugar and spring onion whites.

  • Add the veggies. Adding veggies is truly optional. Cook the veggies on high flame for 2 minutes. Let it be crunchy. Add salt.
  • Add the paneer cubes.

  • Add the cooked rice and mix gently. Add the pepper powder. I added white pepper powder.

  • Mix gently without breaking the rice. Add the spring onion greens.

  • Fried rice is ready to serve.

Notes:
  1. Always ensure that the rice is cooked in separate grains.
  2. Adding veggies is truly your choice.
  3. Frying paneer is always in optional.
  4. You can scramble the paneer like how we make for bhurji and add it to the fried rice.

HONEY SESAME CHILLI POTATOES | CHILI POTATO RECIPE

Honey sesame Chili potato is a delicious indo Chinese starter recipe. I have never tasted this but have heard about this a lot. A very popular Indo chinese starter, this Sesame chili potatoes never fail to please your family members and guests too. It was an instant hit with the kids . Honey Sesame Chilli Potatoes

  Preparation Time : 10 mins | Cooking Time : 25 Mins |   Serves : 2-3

     Potato    2
    Bell pepper | Capsicum  1/2
    Spring onion    few
    Corn flour    2 tblsp
    Maida | all purpose flour   2 tblsp
    Sesame seeds     2 tsp
    Red chili powder    1 tsp
    Green chili   2
    Honey    2 tsp
    Pepper powder  1/2 tsp
    Garlic    4 pods
    Soya sauce   1/2 tsp
    Tomato sauce   1/2 tsp
    Oil    to deep fry  + 1 tblp
    Salt    to taste

Method:
  •   Cut the potatoes into long . Like the way we do for French fries. Do not cut too thin. Let it be bit thick. You can put them into water to avoid de coloration.
  • In a wide bowl add the red chili powder, maida, cornflour and salt.

  • Drain the water from the potatoes and pat dry them. Mix this well with the powders in the bowl.
  • Heat the oil in a pan and when it is hot, slowly put the potatoes in oil. Do not crowd the pan, add in batches. Ensure that the potatoes do not stick to each other while frying. Put the potatoes one by one.

  • Fry till golden brown and drain the extra oil in the kitchen towel.

  • Chop the garlic finely. Cut the capsicum into small cubes. Chop the spring onion whites.
  • In a pan add 1 tbslp of oil and add the chopped garlic and the spring onion whites.
  • When they turn slightly golden brown, add the capsicum and saute for a minute.

  • Add the 2 slit green chilis and cook for a minute. Add the soya sauce,pepper powder and tomato sauce. I used the ketchup.
  • Now add the honey.

  • Discard the green chilis now. The flavour is enough.
  • Now add in the deep fried potatoes. Gently toss it well and cook in a high flame to a minute . Careful not to burn it. Cooking in high flame gives crunchiness to the potato.
  • Garnish with sesame seeds and spring onion greens.

  • This starter has to be served hot so that it will be  crispy.

Notes:
  1. Do not add water to the potato while mixing it with the powders.
  2. Always fry in batches and do not crowd the pan.
  3. The tomato sauce and the honey brings down the spice of green chili and pepper . So don’t worry that it will be very spicy .
  4. Also it won’t be too sweet also.
  5. Sesame seeds gives crunchiness to the potato. No need to roast it. You can add as it is.
  6. Adding rice flour to the powders will make it crispier. Add just 1 tblsp , if adding.
  7. Do not add more corn flour or maida than the quantity mentioned. Else it will become soggy.

THINAI SALAD RECIPE | FOXTAIL MILLET SALAD | MILLET RECIPES

Millet recipes are getting popular now a days and i am posting recipes with various types of millets| sirudhaniyam here every Monday. I have explored many recipes using millets. Foxtail millet salad is one among them . Actually i wanted to post  a chaat recipe with millet but since i made salad today i am posting this healthy foxtail millet salad. Stay tuned for more interesting recipes with millets every week. Foxtail millet is  called as Thinai arisi in tamil | ( Kangni in Hindi, Kora in telugu | Navanne in Kannada |Thina in malayalam ). This salad will be very filling and ideally can consume this for breakfast or lunch. Perfect recipe for weight watchers. I just added the ingredients available with me, so feel free to add up more fruits or vegetables of your choice. Instead of thinai you can make this with quinoa or couscous too.

Foxtail millet salad

  Preparation Time : 30 mins | Cooking Time : 10 Mins |   Serves : 2

     Thinai|foxtail millet   1/4 cup
     Black channa     3 tbslp (cooked)
     Pomegranate seeds   a hand ful
     Capsicum | bell pepper   small piece
     Sweet corn kernels   a hand ful
     Nuts ( badam,pista,walnuts)   few (optional)
     Sprouts      a hand ful
     Ginger   a small piece
     Green chilli   1
     Honey    1 tsp
     Lemon juice    1/2 tsp
     Salt to taste
     Pepper  powder    to taste

Method:

  • Soak the thinai arisi in water for 30 minutes. Meanwhile cut the capsicum into small cubes also boil the corn kernels.
  • Cook the thinai arisi with half cup of water in an open pan. Keep in a very low flame and leave it undisturbed for 10 minutes. The rice will get cooked and the water will be evaporated.

  • Allow this to cool and add the sprouts, corn kernels, black chana pomegranate seeds, nuts and capsicum.
  • In a morar and pestle grind the ginger and green chili and squeeze the juice of this into the salad.

  • Add the lemon juice, salt and honey to the salad.
  • Mix well and serve it immediately.

Notes:
  1. Soaking thinai reduces the cooking time.
  2. You can add white channa , rajma instead of black channa. 
  3. You can add a pinch of chaat masala also a dash of lemon zest can also be added.
  4. Since thinai and chana are bit filling avoid this salad in night. 
  5. Addition of ginger reduces the gastric ailments.
