WATERMELON AND CUCUMBER COOLER | SUMMER DRINKS RECIPES

Watermelon and cucumber cooler

Watermelon and cucumber are one of the best summer cooler. I know that it is best to eat the fruits as it is, but some times we need some fresh fruit juice instead of taking plain water. To stay cool in this summer try out this watermelon and cucumber juice. This is very easy to make and gives instant energy too.
After spending 10 days of holiday in Delhi and in Jim corbert , it is bit tough for all of us to come back to this very hot weather here in Singapore. Stay tuned for more interesting recipes which i have explored during these holidays.


Ingredients
Watermelon and Cucumber juice

  Preparation Time : 5 mins | Cooking Time : Nil |   Yields :  2 cups

   Water melon  1 cup ( chopped into cubes)
   Cucumber      1/4 cup (chopped into cubes)
   Honey or sugar    to taste
   Water   1/2 cup 
    Ice cubes  Few

Method:
  • Put the water melon and cucumber in a mixer.
  • Filter this to take out the seeds of cucumber. If you want , you can skip this step and have the juice as it is.

  • Add sugar or honey and add water.
  • Mix well.

  • Add ice cubes and serve immediately.

Note:
  1. You can add few lemon juice to this to enhance the taste.
  2. Even a dash of freshly squeezed orange juice can also  be added.

COOKING FOR GUESTS SERIES#16 - TRADITIONAL LUNCH MEAL


cooking for guests 16Full meals or traditonal tamilnadu meals or kalyana sappadhu, whatever we call, i always enjoy very happy cooking a full meal. Though now a days , we cook so many variety of cuisine for guests, this traditional tamil nadu meals will always have a special appreciation always. Two weeks back when i had guests at home i made this traditional lunch. Though i felt later , it could be more elaborate with one more curry and a sweet pachadi, still the guests enjoyed the meal. Will post one full tamil nadu meals soon. My mom always used to make this menu for newly married people who visit our place during our childhood days. My mil's place the menu will be slightly different, which i will post soon.

PAPAD KI SABZI |SIDE DISH FOR ROTI | NO ONION NO GARLIC RECIPES



Papad ki sabzi is a rajathani dish , which i learnt from my friend very long back. I noted down the recipe in my book but forgot to try. Last week when i made rotis for me and my hubby for breakfast(rotis for breakfast is very rare) i thought i will try out this sabzi. Actually i was running out of veggies and even onions too. It turned out very nice and we both liked this.This can be made in a jiffy .


Ingredients
Avakkai pickle

  Preparation Time : 5 mins | Cooking Time : 8 Mins|   Serves : 2


     Papad |appalam  2
    Oil   1/2 tsp
    Yogurt | curd   1/2 cup
   Red chilli powder  1/2 tsp
   Cumin seed powder   1/4 tsp
   Coriander powder   1/4 tsp
   Mustard seeds    1/8 tsp
   Cumin seeds 1/8 tsp
   Garam Masala  2 pinches
  Salt    To taste
  Turmeric powder 2 pinches
   Coriander leaves   to garnish



Method:
  • Cut the papads (raw papad) . I used the pepper flavored papad.
  • In a bowl add whisk yogurt and add red chilli powder, turmeric powder, cumin powder, coriander powder and garam masala.

  • Mix the yogurt mixture well.
  • If you want you can microwave the papads. Else you can add it raw also.
  • In a pan add oil and throw in the mustard seeds and cumin seeds. Add the spiced yogurt mixture and keep the flame very low.
  • Stir this mixture and add the papads.

  • After adding papads let this cook for 2-3 minutes in low flame.
  • The papads will get cooked fast. Add Water to thin down the gravy. Addition of papad will make the gravy thick.
  • Switch off the flame in 2 minutes. Sabzi is ready.

  • Check for salt. Generally papads will have salt. so add salt accordingly.
  • Garnish with coriander leaves.

VAZHAIPOO VADAI | VAZHAIPOO VADAI RECIPE


 Vazhipoo vadai , i remember eating at my friend's place during my childhood days. Her mom makes this in very small coin size and we used to eat so many vadais without any counts. Long time i was planning to make vazhipoo vadai, but some how finally i made this last week. We had this with simple rasam rice and it tasted very awesome. Even you can make this for a tea time snack too.


Ingredients
Vazhaipoo vadai

  Preparation Time : 20 mins | Cooking Time : 20 Mins |   Yields : 11 vadais

     Channa dal (kadalai paruppu)  1/2 cup
    Toor dal   2 tblsp
    Vazhaipoo chopped  3/4 cup
    Red chilli   4
    Fennel seeds(sombu)   1 tsp
    Salt   as needed
    Onion    1-2 
   Curry leaves   few
   Oil     for deep frying



Method:
  • Soak the channa dal and toor dal in water for an hour.
  • After an hour drain the water and grind the dal coarsely along with red chilli and sombu.
  • Do not add water while grinding.

  • Just before making the  vadai, add finely chopped onions,chopped vazhaipoo, salt and curry leaves.
  • Mix well. Now the vazhaipoo vadai mix is ready.

  • Keep the oil hot. Put a small piece of batter to this and if it fluffs up immediately, the oil is ready.
  • Bring it to medium.
  • make the dough into small patties.
  • Carefully put them into the oil.
  • You can put 4-5 vadais in the oil depending on the size of the pan.

  • Let them fry till golden brown and take this out.
  • Drain this in a kitchen towel.

  • Serve hot always.
  • Even with curd rice this vadai tastes awesome.
Note:
  • Add salt , onion and cut vazhaipoo just before making the vadais.
  • Ensure water must be completely drained from the vazhaipoo before making.

COOKING FOR GUESTS SERIES #15 | KIDS SNACKS MEAL



Holidays has started for kids and making snacks for them in the evening is the toughest task for every mom. On the first day of holiday, my friend took my kids along with her kid to a movie. Since i have lot of work at home i couldn't join. But i told her i will make some yummy snacks for kids when they are back. So before they come i planned for a kids meal. I know few among them are very choosy with veggies, but kids when they are in group they eat vegetables which they don't like much. So i planned the menu accordingly and the end result was super hit. Kids loved and enjoyed the meal.

The menu i made was pasta, vegetable salad, bread spread with nutella, strawberry milkshake and banana muffin.
I first made the muffin  and while they were baking, i made the strawberry milkshake and kept them in the refrigerator .
I made the tomato vegetable pasta(added only capsicum) and salad .. By the time, the banana muffins got ready.

ARAI PULI KUZHAMBHU RECIPE| SUNDAKKAI VATHA KUZHAMBHU WITH PIDI KARUNAI


Arai-puli-kuzhambhuArai puli kuzhambhu is a not a different dish, it is a vathal kuzhambhu with pidi karanai and black channa. Last year during our December holidays, when i was staying in my mom's place , i learnt this . My perimma made this and tasted very well. I have never cooked pidi karanai (not the elephant foot yam), but with  vathalkuzhambhu it tasted super yum. We all really enjoyed it a lot. I took step wise pictures there but the final one were not good. So after coming here i made this twice and clicked the pictures also. Sharing the recipe of arai puli kuzhambhu. Though the name signifies half tamarind(arai puli) never know why it got the name. Quantity of tamarind water is same as we do for normal vathal kuzhambhu

Ingredients
Arai Puli kuzhambhu

  Preparation Time : 10 mins | Cooking Time : 30 |    Serves: 5-6


     Pidi karanai   2
    Sambar powder   4 and 1/2 tsp   
    Black Channa(kondakadalai)  1 cup
    Sundakkai vathal(turkey berry dried)   1 tblsp
    Dry red chilli 2
   Tamarind extract (from big lemon sized tamarind)    3 cups
   Fenugreek seeds (vendayam)   1/2 tsp
   Mustard seeds  1/4 tsp
   Asafoetida   2 pinches
   Urad dal  1/4 tsp
   Sesame oil  3-4 tblsp
   Jaggery   1/2 tsp
   Curry leaves  few
   Salt   as needed 


Sundakkai-vathal-kuzhambhu

Method:
  • Soak the black channa in water for 6 hours or overnight.
  • Pressure cook this with very little salt.
  • Drain excess water and keep it aside.
  • Soak tamarind and extract water also.

  • Peel the skin of the pidi karanai.Wash them nicely. I don't know exactly what it is called in English.
  • Chop then into slices.

  • Heat oil in a  deep pan and add sesame oil. Throw in the mustard seeds, urad dal, vendayam(methi seeds), red chilli and curry leaves. 
  • When the dal turns golden brown color add sundakkai and pidi karanai.
  • Saute for five minutes in low flame.

  • When the pidi karunai turns golden brown add sambar powder to this and saute for a minute.

  • Add the cooked channa and mix well.
  • Add channagravy
  • Add the tamarind extract and add 1 cup of water. Add salt, turmeric powder, asafoetida and jaggery.
  • Let this boil nicely for 12-15 minutes in a low flame. Stir in between
  • Once the raw smell goes off and the pidi karunai gets cooked , check for a thick gravy consistency.

  • Kuzhambhu is ready to serve.
  • Enjoy with simple papad |appalam. This will taste heaven even with curd rice.
