PALAK PULAO RECIPE | EASY LUNCH BOX RECIPES | PULAO RECIPES

Spinach rice| Palak rice | Palak pulao, is an easy and healthy one pot meal and quite perfect for kids lunch box too. If your kids are not eating spinach in other forms like kootu, masiyal, poriyal, you can make this interesting and healthy palak pulao for them. We all liked it very much and my kids loved it though. Ingredients
Palak pulao

  Preparation Time : 10 mins | Cooking Time : 20 Mins |   Serves : 4-5

    Palak| Spinach   1 cup (loosely packed)
    Basmati rice   1 and 1/2 cup
   Coriander leaves   little
  Green chili  1-2
  Potato   1  (optional)
  Green Peas   1/4 cup
  Onion   1
  Garlic   2 pods
  Coconut   1 tblsp (optional)
  Bay leaf    1
  Oil    1 tblsp
  Salt    as needed

Method:
  • Wash the rice and soak it in 3 cups of water for 20 minutes.
  • Wash the spinach and the  coriander leaves. Chop the onions lengthwise and peel the skin of the potato(if using) and cut them into cubes.
  • In a pan add few drops of oil and saute the palak, green chili, coriander leaves. Do not saute for a long time. ensure not to change the colour.

  • Grind this palak mixture along with coconut(if adding) into a fine paste. If needed add very little water.
  • In a pressure cooker add oil and add the bay leaf and add the onions. Cook the onions till they turn translucent.
  • Add in the cubed potatoes and peas. Mix well and cook for 2 minutes.

  • Add the ground spinach paste to this and saute for a minute. Add salt to this.

  • Add the soaked rice by keeping the water aside. Saute the rice for a minute and add in the water.

  • Cover the lid and cook till one whistle. Keep the flame in very small for 10 minutes and switch it off. Once the pressure is released, fluff it up with fork.

  • Spinach pulao | palak pulao is ready to serve. You can have with any raitha or vadams too.

Notes:
  1. You can add carrots too to make it colourful.
  2. Small piece of ginger can be used while grinding.
  3. You can add cardamom while adding bay leaf to enhance the flavour.
  4. Coriander leaves can be replaced with mint leaves.
  5. Peas can be replaced with handful of soaked chick peas.

RICE KHEER RECIPE | CHAWAL KI KHEER | NAVRATRI RECIPES

Chawal-ki-kheer
     Rice kheer |chawal ki kheer, is similar to the south indian Paal payasam. I recently tasted this in a friend's place during Varalakshmi pooja and the rice kheer was super rich and creamy. I noted down the recipe from her keeping in mind to post this kheer recipe during navratri. The blanched almonds and saffron adds a super crunchy taste to the kheer. Though it takes little time to cook, the kheer is worth trying.

Ingredients
Chawal ki kheer

  Preparation Time : 5 mins | Cooking Time : 45 Mins |   Serves : 3-4

    Basmati   Rice   1/4 cup
    Milk       1 litre
    Almonds     7-8
    Sugar     5-6 tblsp
   Saffron     a pinch

Method:
  • Soak the rice in water for 30 minutes and put the almonds in very hot water and soak for 30 minutes.
  • Take out the skin and slice the almonds.Again soak the almonds till the kheer gets ready. Soak saffron in 1 tblsp of warm milk.

  • In a heavy bottomed vessel, i used my pressure cooker, drain the water from the rice and add it to the pressure cooker and add the milk to this.
  • Put it in a medium low flame and let this slowly boil. 
  • Stir continuously , and once the milk starts boiling put it in a low flame. 
  • After 30 minutes when it becomes little thick add the saffron milk. The rice will get cooked in some time.

  • When the rice gets completely mashed and the kheer gets thick switch off the flame. Add the sugar and mix well. Add the sliced almonds to this kheer. Serve hot or chilled.

SWEET CORN SUNDAL RECIPE | NAVRATRI RECIPES

Sweet corn generally either i make soup or rice with it. This is the first time i am making Sundal with sweet corn. Actually i tried it once few months back, as it is navratri season i thought i will post the recipe of sweet corn sundal. You can make it even on normal days too. This sundal can be had with even rice and  rasam too. The addition of ginger and carrots make this sundal taste more awesome. So don't skip it. I used fresh corn, you can use frozen corn too. Ingredients
Sweet corn sundal

  Preparation Time : 20 mins | Cooking Time : 10 Mins |   Serves : 2-3

     Sweet Corn   1*
     Carrot   1/2
     Ginger    a small piece
    Green chilli   1
    Oil     1 tsp
    Mustard seeds  1/4 tsp
    Curry leaves   few
   Coconut scrapped  2-3 tblsp
   Salt   as needed
*If using frozen corn kernels take 1/2 cup and boil in hot water for 10 minutes.

Method:
  • Pressure cook the corn and take out the kernels from it.
  • Grate the carrot in a small grater.

  • In a mortar and pestle just grind the ginger and chilli coarsely.
  • Add oil in a pan and throw in the mustard seeds. Add the coarsely ground ginger and green chili paste and add the curry leaves to this.

  • Add the cooked sweet corn kernels. Add the grated carrots and salt to this . Mix well.

  • Let this cook in a low flame for few minutes. Add the coconut and switch off the flame.
  • Mix well.

  • Sweet corn sundal is ready for neivedhyam.

Notes:
  1. You can add finely chopped coriander leaves to the sundal which will enhance the flavour. I didn’t have in hand so didin’t add.
  2. Since the sweet corn is bit sweet 1 green chili for 1 sweet corn is perfect.
  3. Do not skip the ginger as it will enhance the flavour of the sundal.

Navratri 2014 has started, and  many of you have must have kept Golu by now. I am also getting a lot of navratri invites from my friends and excited to see their Golu decorations too.
