CORN CHEESE PARATHA | EASY PARATHA RECIPES

Sweet-corn+cheese +paratha
Corn and cheese is always a winning combo and i already posted corn cheese balls recipe but this corn cheese paratha i gave for Kungumam Thozi magazine. It got published in first week of March. Parathas will be in the lunch box menu of kids every week. Mostly i make aloo paratha or gobi paratha for them. When i made this one day for dinner both my kids loved it and requested to make the same for the lunch box too the next day. Liking a same dish by both kids is not easy at my home. I think moms with 2 grown up kids will vouch for it. Try this easy paratha recipe at home and i am sure your teenage kid or the little one will enjoy this corn cheese paratha.


Corn cheese paratha

  Preparation Time : 10 mins | Cooking Time : 30 Mins |Makes: 5

    Sweet corn   1 (if using frozen take 1/2 cup)
    Whole wheat flour|atta     1 cup
    Grated cheese ( i used mozzarella)   1/2 cup
    Milagai thool     3/4 tsp
    Chaat masala      2 pinches
    Salt    to  taste
    Oil| butter    to cook the parathas

Method:
  • Cook the corn till soft and take out the corn kernels. You can use frozen corn too. If using frozen corn, just thaw this and cook in water for 5 minutes and drain the water completely.
  • Pat dry them.
  • Just pulse this in a mixie once.

  • Add this to a wide bowl, add red chili powder, chaat masala, salt and cheese.
  • Mix well.
  • Take a lemon sized ball of chapathi dough.

  • Roll this into a small disc and place a tblsp of filling in the center and cover the dough.

  • Roll this into a paratha either thick or thin. Heat tawa on put the paratha on this.

  • Cook till golden brown on both sides. Add little oil or butter to this when it becomes golden brown on both sides.

  • Parathas are ready to serve. You can completely cool this and pack for your kids lunch box too.

Notes:

  1. You can add finely chopped capsicum or grated carrots too while making the filling.
  2. Garam masala can be replaced with chaat masala.
  3. Oregano and red chili flakes can also be replaced with red chili powder and chaat masala to give a pizza flavour to the paratha.

RAGI ALOO METHI PARATHA | MILLET RECIPES

Ragi also called as Kezhvaragu in tamil | Finger millet in English , is an easily available millet everywhere. Generally my mom makes puttu with ragi and also dosai and adai too. Though i have tried these all, wanted to try something new with ragi flour. This ragi aloo methi paratha i have tried for the mangayar malar book . Ragi is an excellent source of calcium and very good diabetics. It is a very good source of iron too. You can make this as a stuffed aloo paratha too.




Ragi aloo methi paratha

  Preparation Time : 10 mins | Cooking Time : 20 Mins |Makes: 4

     Ragi    1/4 cup
    Wheat flour   1/4 flour
     Red chili powder   1/2 tsp
     Salt    to taste
     Garam masala    2 pinches
     Oil     1 tsp + to make the paratha
     Potato     1 
     Methi leaves    2 tbslp (finely chopped)

Method:
  • Boil the potatoes and take out the skin. Adding methi is optional. You can add coriander leaves too.
  • Mash the potatoes . In a wide bowl add the ragi flour, wheat flour, red chili powder, garam masala, salt , methi leaves and mashed potato. 
  • Add little water to this and make a pliable soft dough. Add 1 tsp of oil to this and keep it covered.

  • Make big lemon sized equal balls. Roll one ball at a time gently by dusting this with wheat flour.

  • Heat a tawa and cook on both sides and add little oil | butter to the paratha.

  • Repeat this for the rest of the dough.
  • Serve hot with plain yogurt and a pickle of your choice.
Millet-paratha
Notes:
  1. The ratio of 1:1 of ragi and wheat flour worked out well for me. If you feel it is difficult to roll add 1 to 2 tblsp extra flour while kneading.
  2. You can add mint leaves also and ajwain seeds to the dough.
  3. Potato makes the dough softer and easy to roll too. 
  4. You make into small thick parathas too.
  5. You can actually fry this as a poori too for kids.

PIZZA FLAVORED PARATHA | PARATHA RECIPES

Pizza-paratha
Pizza flavored parathas, the thought just flashed me when i was cleaning my freezer. I saw some sun dried tomatoes lying in my freezer and was thinking to make some savory buns using that. Then suddenly this idea of making pizza flavored parathas flashed me and tried it the next day. It turned out quite well and i am sure kids will love this for sure. For a change from regular parathas, you can give this for kids lunch box. Somehow i felt while writing this Sour cream dip will pair with this paratha very well.


Ingredients
Pizza flavored paratha

  Preparation Time : 10 mins | Cooking Time :15 mins |  Yields: 4 parathas


     Whole wheat flour  1 cup
     Pasta sauce    2 tblsp
     Salt    to taste
     Italian seasoning   1 tsp
     Red chilli flakes   to taste
     Sun dried tomato     2 tblsp  finely chopped (optional)
     Oil | Olive oil      2 tsp     


Pizza-flavored -paratha
Method:
  • Combine all the ingredients except oil in a wide bowl. Knead into a soft pliable dough adding water as required. 
  • Add little oil and grease the dough and keep it covered for 10 minutes.
  • Divide the dough into equal balls and start rolling them into disks to make parathas.

  • Heat the griddle and cook the parathas on both sides . Smear little oil while cooking.

  • Repeat the same process for the rest of the dough. 
  • Serve the parathas as it as  or you can have with sour cream dip.

Notes:

  • Sundried tomatoes are purely optional. As it has slightly sweetish taste, if adding it, add little extra chili flakes.
  • You can add little chopped basil leaves if you want.

PLAIN PARATHA |PLAIN PARATHA RECIPE |PARATHA RECIPES

Plain-paratha

   As South Indians, we always make idli, dosa, upma for breakfast but parathas rarely take place in our menu for breakfast. Some times when i make aloo paratha for kids lunch box and keep the same for me for breakfast. During our trip to Delhi, ( i know i am talking too much about the trip, please bear with me) we happened to have parathas for breakfast on most of the days. But we all enjoyed as whenever we go for an international holiday we end up eating cornflakes, bread and juice for breakfast. Few years back when we go for a North India trip we hunt for places to have South Indian food , but now a days Indian Vegetarian food is more comfortable for us ,especially for me. These plain parathas i have added in my last week's cooking for guests menu. So if you have guest, you need not not make lot of chapathis, just few parathas you can make as they are thick.


Ingredients
Avakkai pickle

  Preparation Time : 15 mins | Cooking Time : 30 |   Yields :8 Parathas


    Whole wheat flour|atta  2 Cups
    Oil            1-2 tblsp
   Ghee           1-2 Tblsp  
   Salt         To taste
   Water       To knead the dough  
  


Plain-paratha


Method:
  • In a wide bowl add the whole wheat flour and salt. Add water little by little and knead it into a pliable soft dough.
  • Cover and keep it aside for 10 minutes.
  • Divide the dough into equal parts. Make the portions big and not small as we do for rotis.

  • Dust the rolling board and and roll the roti into a thick and small disc.
  • Apply ghee or oil on the disc.

  • Close the edges and make it into a whole mass. Dust with some flour.

  • Roll it into a thick paratha.  Heat a tawa and place the paratha on the tawa.

  • Cook on both sides and when they are cooking add few drops of oil on both sides. Repeat the same process for rest of the parathas.

  • Parathas are ready to serve. Serve this with you favorite sabzi. We  had paratha, sabzi and tea for breakfast and replaced tea with Lassi for Dinner. I can say "wow what a comforting meal "
  Plain -paratha

  • You can  make the either round parathas or square ones or triangle parathas.

MIXED VEGETABLE PARATHA |NO ONION NO GARLIC RECIPES

Mixed vegetable paratha , i generally make when i have few veggies and wanted to clean up the fridge. Though most of the parathas we have have the option of making it without onion and garlic, i always make this mixed vegetable paratha with  onion only. But last week, i tried this mixed vegetable paratha, without adding onion and garlic and it turned out nice. As during this navaratri time , in many houses they won’t consume onion and garlic i thought it will be the right time for posting this Mixed vegetable paratha.

INGREDEINTS: FOR STUFFING : MAKES 11- 12 APPROX.
You can add the quantity of veggies as per you choice and availability.
POTATO 1
CAPSICUM (FINELY CHOPPED) 2 TBLSP
CORN KERNELS A HAND FUL
GREEN PEAS A HAND FUL
CARROT(GRATED) 1/4 CUP
PANEER 5-6 SMALL CUBES
RED CHILLI POWDER 1/2 TSP
CORIANDER POWDER 1/4 TSP
CUMIN SEED POWDER 1/4 TSP
GARAM MASALA 1/4 TSP
SALT AS NEEDED

INGREDIENTS FOR DOUGH and OTHER INGREDIENTS
WHOLE WHEAT FLOUR |ATTA 1 AND 1/2 CUP
WATER AS NEEDED
OIL 1 TSP
ATTA FOR DUSTING
OIL FOR MAKING PARATHAS
  • Cook  the potatoes till soft and in a pan add water and boil the green peas, corn kernells(i used frozen), paneer cubes for 5 minutes.
  • Switch off the flame and drain the water and when it is cool, mash them nicely with the hands.
  • In a wide bowl,add the mashed veggies and paneer, potato, grated carrot, red chilli powder, garam masala, coriander powder, cumin seed powder and salt.
  • Mix them with your hands nicely. Make equal sized balls. Stuffing is ready for the paratha.

  • Knead the wheat flour into a pliable dough with enough water and smear it with a tsp of oil and keep it covered for 10 minutes.
  • Make them into equal sized balls.
  • To make parathas take a ball of the dough and roll them into a small disc by dusting enough atta .
  • Place the stuffing in the center and close it.

  • dust with flour and roll them into a medium sized thick paratha.
  • I always like parathas thick. If you want you can roll them thinly.

  • Heat a tawa and when hot, place the rolled parathas on it and cook on both sides till it becomes golden brown. Repeat this for the rest of the dough.

Note:
  • finely chopped cabbage and grated cauliflower can be added to this. If adding drain the water completely , which it oozes out.
  • Prepare the stuffing just before you make the parathas. else the salt in that will ooze out water.
  • If you feel the stuffing is watery by any chance, roast 2 tblsp of besan (kadalai maavu) in a pan and add it to the stuffing and mix well.
  • Finely chopped coriander leaves can be added.
  • Kasoori methi can also be added.

LACHHA PARATHA | LACHCHA PARATHA RECIPE


LACHHA-PARATHA
Lachha paratha is the one which i wanted to try for a long time, it finally worked out during the long weekend last week. Lachha paratha turned out flaky and we enjoyed with Palak kofta Gravy( my next post ) During our childhood days, we used to eat the Kerala Malabar Parrota in a friend’s place and we too help her mom in making the parrota. In that same way i have tried this Lachha paratha and let me share the recipe of Lachha Paratha.

INGREDIENTS: 6-7 PARATHAS
WHOLE WHEAT FLOUR | ATTA2 CUPS
SALT1/4 TSP
GHEE1-2 TBLSP
OIL| BUTTERTO GREASE THE PARATHA
WATERTO KNEAD THE DOUGH
Lachha- paratha
METHOD:
  • In a wide bowl add the flour and salt and knead the dough using luke warm water. Make it into a pliable soft dough. Keep it covered and set aside for 20 minutes.
  • After that divide the dough into 7 equal parts.
  • Dust the dough in dry atta.  Roll it into a big round chapathi.
  • Spread this with ghee evenly and sprinkle some atta on this.

  • Start making thin pleats out of this and twist the pleated dough. The more the pleats you will get more layers.

  • Make it into a pinwheel and dust the rolling board with flour and start rolling gently so that the layers will be there. Make it into a paratha.

  • Heat a griddle and cook the parathas on both sides. Apply oil | ghee on both sides.

  • Slightly crush the parathas gently to make the layers more visible.
  • Serve hot with any Paneer dish or any other side dish of your choice.
Lachha - paratha
Note:
  1. Always make the pleat thin , the more the pleats the parathas will be very flaky.
  2. You can add 1/2 cup of maida(plain flour) to the dough while kneading.
