CHOCOLATE ICE CREAM RECIPE | HOME MADE EGGLESS CHOCOLATE ICE CREAM | NO ICE CREAM MAKER

Homemade-eggless-chocolate-ice creamValentines Day is more special to me, as our son Varun was born on the same day. He is turning 8 this year and he wanted me to make Chocolate ice cream for his birthday.  I made it yesterday evening and it turned out very well . I have tried mango ice cream , strawberry ice cream but this is the first one i have tried without condensed milk. But to my surprise it was very creamy. I adapted the recipe from here, which i bookmarked a long back. Try this chocolate ice cream this Valentine's day and  surprise your spouse. This ice cream requires no cooking. Even you can engage your kids in making this ice cream too.


Ingredients
Chocolate Ice cream

  Preparation Time : 15 mins | Standing Time : 6-8 Hours |   Serves : 4-5

    Cocoa Powder 1/2 cup
   White Sugar   1/2 cup
    Brown Sugar   1/4 cup
    Milk          1/2 cup
    Cream    1 cup
    Vanilla essence  1 tsp
   Chocolate chip cookies (Chopped)   1/2 cup (optional)

Method:
  • In a wide bowl add the cocoa powder, both the sugar and  vanilla essence .
  • Add milk to this.

  • Mix well without any lumps.

  • Whip the cream using an electric beater. As i don't have it i poured the whipping cream in a mixer and whipped it for few seconds. It turned out fantastic.

  • Add this to the chocolate mix and fold it gently and evenly.

  • Transfer it to a container . Freeze it for an hour and take out and blend this in a mixer for 2 minutes and put it back to freezer again.
  • After an hour , if using chocolate chip cookies, pulse 4-5 cookies (i used store bought cookies)  in a mixer and add it to the ice cream mix. Mix well and set it to freeze for 5-6 hours or over night.

  • The ice cream will be set and you will get creamy chocolate ice cream .

  • You can add chocolate chips instead of the cookies.
  • Even finely chopped nuts (any nuts of your choice) can be added before you set it for freezing.
  • I added both brown sugar and white sugar but you can add only white sugar. In that case add 3/4 cup of white sugar.

KAAPARISI RECIPE | A TRADITIONAL SWEET

Kaaparisi Kaaprisi is a traditional sweet made in our home during the naming ceremony of the new born child . Generally we do the Punyavachanam (naming ceremony) for the baby on the 11th day from the day it is born. Kaaparisi we make and give for all ladies along with the haldi kumkum (vettathallai pakku). This is made with rice and jaggery which has a crispy texture, roasted dal and coconuts adds extra taste to this. During my India trip i asked my mom for the recipe and  she instructed me the method and i made this kaaparisi under my mom's supervision.

Ingredients

  Preparation Time : 20 mins | Cooking Time : 15Mins |   Serves : 1 Cup

    Raw Rice   1/4 cup
    Jaggery  1/4 cup
    Pottukadalai 1/8 cup 
    Peanuts  1 tblsp (optional)
    Coconut bits    2 tsp
    Ghee 1 tsp
   Cardamom powder   A pinch

Method:
  • Wash and soak the rice for 15 minutes and drain the water.

  • In a pan dry roast the rice in smaller lots till they become golden brown. (Porichu edukanum)

  • Keep it aside. Roast the coconut bits and keep aside.
  • Melt jaggery and filter the impurities.
  • Add the roasted coconut bits.

  • Let the jaggery comes to the consistency which we generally make for pori urundai. Keep water in a cup and add jaggery syrup to this. When you could able to make a hard ball out of this. That is the right consistency.
  • Pulse the roasted rice once . In a wide bowl add the pulsed rice, roasted gram, and cardamom powder. If adding peanuts deskin it , roast and add now.
  • Pour the jaggery syrup over this.

Note:

  1. The ratio of rice , roasted  dal : jaggery is  3:1. For 3 portions of the mixture 1 portion of jaggery is enough.

KOVIL SAKKARAI PONGAL RECIPE | PONGAL FESTIVAL RECIPES

Sakkarai pongal
Pongal festival 2014 is celebrated tomorrow. I have already posted sakkarai pongal recipe which is  my mom's version. She always adds milk to sakkarai pongal but most of the traditional Kovil sakkarai pongal will not have milk in it. Though i don't like the addition of pacha karpooram(edible camphor) and cardamom powder, generally they are added in sweet pongal.

Ingredients
Sakkarai pongal

  Preparation Time : 5 mins | Cooking Time : 30Mins |   Serves : 4-5

    Raw Rice   1/2 cup
    Yellow moong dal  4 tblsp
    Water   3 cups 
    Jaggery  3/4  Cup
    Cashew nuts    Few
    Ghee 1-2 tblsp
    Raisins   few
    Edible camphor    a pinch
    Nutmeg powder    a pinch(optional)
   Cardamom powder   A pinch(Optional)


Sweet -pongal


Method :
  • Dry roast rice and moong dal for 3-4 minutes in medium flame , without getting burnt. Just roast till the rice and dal becomes warm.
  • Wash the rice and dal and pressure cook this by adding 3 cups of water. Cook till 5-6 whistles and keep it in a very low flame for 5 minutes in the last.
  • Switch off the flame.

  • Meanwhile add jaggery to a pan and add little water(1/2 cup).
  • When the jaggery melts filter the impurities and bring the jaggery syrup to boil again.

  • Meanwhile mash the rice with the back of a ladle. 
  • Add the mashed rice and dal mix to the jaggery syrup.

  • Mix well and add cardamom powder and edible camphor. Do not add more than a pinch. If adding nutmeg powder add a pinch at this stage.

  • Fry cashew nuts and raisins in ghee and when  it turns golden brown add it to the sakkarai pongal.
  • Add 1 to 2 tblsp of ghee to the pongal and mix well.

  • Switch off the flame.
  • Sakkari pongal is ready for neivedhyam.

Note:

  1. Colour of the sakkari pongal depends on the vellam. Always use dark vellam to get a nice brown colour.

KALKANDU PONGAL RECIPE | PONGAL FESTIVAL RECIPES

Kalkandu -Pongal
Pongal festival is coming next week and it is the first traditional festival of Tamil people in the year 2014. Though we make Sakkarai Pongal  for pongal festival, this kalkandu pongal we make on the next day of pongal along with variety rice. My mom makes it very well and during my trip to India i took a pack  of kalkandu |rock candy from my mom , which was bigger in size . I made kalkandu pongal yesterday and it tasted just out of the world. Try out this creamy, milky pongal .
I used the big rock candy. If using the small kalkandu the measurement  for 1/2 cup rice add 1/2 cup of kalkandu.


Ingredients
Kalkandu Pongal

  Preparation Time : 5 mins | Cooking Time : 30Mins |   Serves : 4-5

    Raw Rice   1/2 cup
    Full Cream Milk  2 cups
    Water 1 cup 
    Sugar candy | Kalkandu  1/4 Cup
    Cashew nuts    Few
    Ghee 2 tsp
   Cardamom powder   A pinch(Optional)


Kalkandu -pongal

Method:

  • Wash the rice and add 2 cups of milk and 1 cup of water. Pressure cook this in a big vessel so as to avoid the milk flowing out from the vessel.  I used a vessel in which i can cook 3 cups of rice.
  • Pressure cook till 5-6 whistles and keep the flame in low for 10 minutes. the rice must be cooked by now.
  • Mash this nicely with the back of a ladle so that the rice will get mashed.

  • In a pan add ghee and fry the cashew nuts it becomes golden brown.
  • Keep it aside. Now add the kalkandu to this. Add little water so that the kalkandu will melt.  Since i put big one it took time to melt and by the time it started crystalising , no need to panic. Just add the mashed rice to this. Keep the flame low.

    • Mix well and let it cook for 5 minutes in low flame. Add the roasted cashew nuts.

    • Switch off the flame and serve hot.

    Notes:
    1. You can add little more milk after mashing the rice to get a little semi thick consistency. 
    2. Never add milk to the  sugar candy which is boiling. ,Milk will be curdled.
    3. I didn't put cardamom powder as i like the flavour of the milk much.
