KUTHIRAIVALI MURUNGA KEERAI ADAI | MILLET RECIPES

Barnyard milet- adai
Kuthiraivali | Barnyard millet adai i tried for the first time few months back when i was making supplement book for Mangayar malar themed "Millet recipes". Murungakeerai | Drumstick leaves we generally make poriyal. My mom adds this to adai and we all are a great fan of murunga keerai adai. We have a murunga maram at our backyard from where we get fresh leaves and fresh drumstick (organic too) whenever we want. Even in the entire street they take drumstick leaves from our house. And during the drumstick season, amma will give drumsticks to all the friends as we get most and more of drumstick from the tree. Whenever i cook murngakeerai i have memories of my childhood related to it. I will be the person who will go to the terrace and pluck the fresh leaves from the tree for the adai or poriyal.
Kuthiraivali adai with murunga keerai was a  wonderful combo and i had this for breakfast today with a glass of neer mor too. You can have adai with aviyal too.

RAGI CHOCOLATE MILKSHAKE | MALT | MILLET RECIPES

Millet-Milkshake
Ragi | Finger millet flour, i made puttu with that for this morning breakfast. First i thought, i will click pictures and post today but morning it was hectic i couldn't click. While i was serving ragi puttu for my hubby, Varsha asked me what is this. Even when i first tasted ragi cookies i felt the same too. As a typical teenager and a perfect foodie, Varsha told me why don't you try Ragi chocolate milkshake with this. Though i have tried these all, wanted to try something new with ragi flour. This ragi aloo methi paratha i have tried for the mangayar malar book . Ragi is an excellent source of calcium and very good diabetics. It is a very good source of iron too. You can make this as a stuffed aloo paratha too.

  • Repeat this for the rest of the dough.
  • Serve hot with plain yogurt and a pickle of your choice.
Millet-paratha
Notes:
  1. The ratio of 1:1 of ragi and wheat flour worked out well for me. If you feel it is difficult to roll add 1 to 2 tblsp extra flour while kneading.
  2. You can add mint leaves also and ajwain seeds to the dough.
  3. Potato makes the dough softer and easy to roll too.
  4. You make into small thick parathas too.
  5. You can actually fry this as a poori too for kids.

  • Grease a plate with oil and add the batter to this. Sprinkle with red chili powder and jeera powder.
  • Steam this for 10 to 12 minutes. Insert a tooth pick in the center of the dhokla and if it comes out clean, switch off the flame,

Check out my other interesting millet recipes:

Notes:
  • Instead of eno salt you can use 1/2 tsp of baking soda.
  • I just tempered with mustard seeds and curry leaves. You can add while sesame seeds or green chili too.
  • The dhoklas stayed soft for 3-4 hours.
  • If the yogurt is sour, add them just before making. If they are normal add while grinding and while when it is fermenting along with the batter, it will become sour.
  • If the sourness of the batter is less, add little lemon juice to this.

Method:
  • In a wide bowl, add the millet flour, naatu sakkarai, oil, baking soda and baking powder.
  • Knead this into a smooth dough, sprinkle little milk for kneading.
  • Initially i thought the dough will not hold, but it beautifully folded and formed a dough.
ingredientsCookie- dough
  • If making in bulk, just keep the dough in the refrigerator and bake in batches. The jaggery | naatu sakkarai will make the dough loose if you keep it outside.
  • Take a small lemon size portion of dough and flatten them. You can use a cookie cutter to make proper round shapes.

  2. Instead of jowar flour and bajra flour you can add besan | kadalai maavu and wheat flour.
  3. Palak also can be replaced with methi leaves.
  4. Instead of red chili powder you can add freshly ground green chili and ginger.
