INDIAN KULFI ICE CREAM RECIPE | EGGLESS ICE CREAM RECIPES

Kulfi- ice creamWishing you all a very Happy New year 2014. Let this new year brings lots of abundance and joy in your life. Kulif ice cream i was planning to post to post for a long time . While i was scheduling clicks to post during my vacation time in chennai, suddenly i realized ,New year will be coming in between and for that i want to post a Sweet recipe. Suddenly Kulfi came into my mind and a reader also requested for this recipe long back. So made Kulfi ice crema just before the day we are about to leave from home and clicked it. the ice cream turned out super creamy and everyone loved it a lot.

Ingredients
Kulfi Ice cream

  Preparation Time : 5 mins | Cooking Time : 45Mins |   Serves : 3 to 4

    Full cream Milk   5 cups + 3 tblsp
    Condensed Milk  1/2 cup
    Badam 5-6
    Bread  1 Slice
    Saffron    6-7 strands
    Rose water  1 tsp



Kulfi
Method:
  • In a pan add milk and let it boil . Stir in between and keep the flame low. Let the milk start reducing.
  • Trim the edges of the bread and grind this into a fine paste by adding 3 tblsp of milk.

  • Add this bread paste to the milk and add the condensed milk. 
  • Add the saffron strands to the milk. Mix well. After adding the condensed milk and bread mixture the milk will be thickened.

  • Pulse the badam in a mixer just once.
  • Add this to the milk.

  • By this time the milk must  have reached the right consistency. It should be like a idli batter.
  • Switch off the flame and allow this to cool. 
  • Add rose water.Pour in vessel .
  • Freeze for 15 minutes and take it out. Stir well once with a hand beater.( the one which we use to make butter milk)
  • Cover and Freeze it again by pouring it in a kulfi mould or matka for 5-6 hours.

  • My friend's brother bought this beautiful teracotta matka for me from Bangalore. Thank you Sudhir.
  • After taking out from freezer keepit out for 5 to 10 minutes or run the kulfi moulds in water and take it out carefully.

Note:
  1. You can add pistachio too.
  2. Sugar can be added instead of condensed milk but adding condensed milk gives a rich taste to the kulfi.
  3. 1 tblsp of corn flour can be added instead of bread. 
  4. Use white bread.

SENNAI KIZHANGHU CURRY | YAM CURRY RECIPE

Yam Curry Recipe

Yam | Sennai kizhangu |Elephant foot , is one among my favorite vegetable but unfortunately my kids and Suresh doesn't like this much and hence i don't make this at home. I have already posted a recipe of Yam Tawa Fry. Last week during my stay at my mom's place one of our childhood friend came to meet me and me, my friend and my sister had a super fun time, remembering our childhood memories. During our chatting session we were talking about the yam curry which my friend's mom used to make for us. We decided to make it the next day as my sister was also a big fan of yam and her kids and hubby were not!! Amma cooked for the meal and my sister made this yam curry and of course i assisted her by clicking pictures to share with you all.

Ingredients
Yam curry

  Preparation Time : 15 mins | Cooking Time : 25Mins |   Serves : 3 to 4

    Yam|Sennai kizhanghu|Suran   1/2 kg
    Oil  2-3 tblsp
    Small Onion 7-8
    Garlic  2 pods
    Red Chilli     2-3
    Turmeric Powder 1/4 tsp
    Grated Coconut 1 Tbslp
    Fennel Seeds 2 tsp
    Cumin Seeds 1tsp
    Salt  As needed
    Mustard Seeds 1/4 tsp


Yam Curry

Method:
  • Cut the Yam into big cubes . Add little salt and turmeric powder and parboil the yam . Do not over cook. Let the pieces become firm .

  • Drain the water in a colander.

  • Grind onions, garlic,red chilli, fennel seeds and cumin seeds coarsely.

  • In a pan add oil and throw in the mustard seeds. Add the cooked Yam to this.
  • Fry them in medium flame till it becomes golden brown. Add salt to this.
  • Add the ground masala to this.

  • Mix well and let it cook in a medium low flame for 10 minutes till the colour changes to nice golden brown colour.
  • Add grated coconut to this and mix well.

  • Switch off the flame. Sennai kizhangu curry is ready for serving.
  • My mom made Capsicum Sambar and this sennai kilanghu curry was a perfect combo for this.

Note:
  1. Coconut can be added while grinding. 
  2. Red chilli powder can be added instead of red chillis.
  3. Black pepper can be added instead of red chilli powder.
  4. This curry can be made with raw banana or potato too.

CHOCOLATE MOUSSE RECIPE | EGGLESS CHOCOLATE MOUSSE RECIPE


Chocolate Mousse

Chocolate  Mousse recipe without eggs or gelatin, i wanted to try for a long time and finally i tried 2 weeks back at home as a dessert when i invited few kids after their exams got over. I made a kids meal which i will be posting this weekend. I made this Chocolate Mousse for dessert. All the kids enjoyed it very much. Make this easy dessert this Christmas. Wish all my readers a Merry Christmas.

Ingredients
Eggless Chocolate Mousse

  Preparation Time : 10 mins | Cooking Time : 15 Mins |   Serves : 2 to 3

    Milk 1 cup
   Cocoa Powder 1 tblsp
   Corn Flour 1/2 tblsp
   Sugar 2 tblsp
   Agar agar 1and1/2 tsp
   Vanilla Essence 1 tsp
   Cream 1/2 Cup
   Chocolate Sprinkles to decorate



Chocolate+Mousse


METHOD:
  • Mix Cocoa powder, cprn flour in 4 tblsp of milk into a fine paste without any lumps.
  • Boil the rest of the milk in a saucepan and add sugar to this.
  • Add the Corn flour+cocoa powder paste to the milk and stir it nicely without forming lumps.
  • This should be in custard consistency.
  • Switch off the flame.

Cocoa powderChocolate Mousse

  • Dissolve agar agar in 1/2 cup of water till it dissolves. No need to add hot water.
  • When it dissolves add this to the chocolate milk which is in custard consistency. Mix well.
  • Chill this mixture in freezer for 20 minutes.
  • Beat this mixture in a mixer after 20 minutes.
Moussemousse

  • Beat the cream in a hand blender till it forms a peak. I used the mixie for this.Add vanilla essence to this.
  • Add the cream to the Chocolate custard mixture.
Whippingcreamchocolate + cream





  • Mix well and put them in serving bowls.
  • Put a cling wrap or aluminum foil and keep it in the refrigerator(not freezer) for 5 to 6 hours.
  • Sprinkle some chocolate sprinkles just before serving.

    COOKING FOR GUEST SERIES #3 |INDO CHINESE MENU

    Indo Chinese Menu

    Indo Chinese menu is always liked by everyone at my home. For a change with usual chapathis this indo chinese menu with fried rice, manchurian, spring rolls, biscuit pudding and Ice lemon Tea, this combo is always a super hit among my kids and  guests. I made Spring rolls for starter. You can make Gobi Manchurian too. I made Spring rolls and put in a zip lock cover and kept in the freezer. I just fried before serving. Biscuit pudding also you can make ahead and keep it chilled the before day. Ice lemon tea can be made in the morning and kept in the refrigerator. Generally it is preferred to serve Ice lemon Tea if guests are coming for Lunch. Serve it before 7 if they are coming for dinner.

    VEGETABLE SANDWICH RECIPE | BREAD SANDWICH RECIPE

    Bread Sandwich |Vegetable Sandwich , though everyone have their own versions, i tasted this version in Kailash Parbhat in Singapore. When me and Raji visited Kailash Parbhat during our Diwali shopping time i ordered the this Bread sandwich which they "College Girl Sandwich". though i have sandwich maker i made it in tawa so that it will be easy for all who do not  own a sandwich maker.
       I have been postponing to post this as i am not happy with the pictures which were took on a rainy day noon. I don't have time to re click but sometimes i feel if the  recipes turn out fantastic and if the pictures are not satisfactory as i expected i some how manage to make it up and post. I don't want my readers to miss out some yummy recipes. I am enjoying my vacation in Chennai and have very little time to spend on Blogging. So please bear with any delay in replying query. Over to Vegetable  Bread Sandwich recipe.



    Ingredients
    Bread Sandwich

      Preparation Time : 10 mins | Cooking Time : 10 Mins per Sandwich |   Serves : 1-2

        Bread    4
        Potato            1
        Tomato          1
        Green chutney     1- 2 tblsp
        Grated Cheese(pizza cheese)   As needed
        Cucumber   Few slices
        Butter|Ghee       To grease




    Bread Sandwich

    Method:
    • Boil the potatoes. Let this be firm not too soft.
    • Cut this into round slices. Cut the cucumber into roundels
    • Cut the tomatoes into thin slices
    • I used WholeWheat bread. Take 2 slices of bread. Generously grease butter | ghee on one side of two breads.
    •  Spread green chutney on the side which is not roasted.
    • Place the potatoes, cucumber and tomatoes on this top side and add the grated cheese.
    • Close this with the other bread.

    • Carefully take this and place it on a tawa. Toast till on both sides. Flip carefully.

  • cut them into squares or triangles as desired. Repeat this for the rest of the slices.

    TORTILLA PIZZA RECIPE | KIDS FRIENDLY SNACKS RECIPE|PIZZA USING TORTILLA

    Tortilla pizza
    Pizza , the name itself makes the mouth water for  almost all of us. Though we know it is high in calorie we still enjoy pizza and especially kids love pizza the most. All the time it is not economical to buy pizza for them at Pizza outlets and not good for health too. This tortilla pizza is the easiest way of making pizza. If you have ready made tortilla at home just go ahead and make this pizza. Even you can make this with left over Chapathi too. I made in Oven and 2 days back i tried this tortilla pizza in tawa too. It turned out well. so even if you don't have oven at home also you can still make this pizza.


    Ingredients
    Tortilla Pizza

      Preparation Time : 10 mins | Cooking Time : 5 Mins per pizza |   Serves : 2

        Tortilla       2
        Baby Corn    1
        Onion            1
        Tomato          1
        Pasta Sauce          As needed
        Capsicum     1/2
        Grated Cheese(pizza cheese)   As needed
        Red chilli flakes   As needed
        Olive Oil       To grease
        Oregano       As needed




    Pizza

    Method:
    • Cut the baby corn and capsicum length wise.
    • Cube the onions and thinly slice the tomato into roundels.
    • In a greased baking tray place the tortilla and spread the pasta sauce on this.
    • Spread grated cheese on this.This is optional.

    • Arrange the baby corn, capsicum and tomatoes. You can arrange this as per your choice.
    • Sprinkle cheese generously on this and add the oregano on this.

    • Bake in the Oven at 170 degrees for 5 minutes or till the cheese melts.
    • Tortilla pizza
    • Cut into slices and serve by sprinkling red chilli flakes on this.

    • If making on tawa, just heat the tawa and cook the tortila on both sides for less than a minute.
    • And take itout from the tawa and arrange the toppings. Keep in again on the tawa and cover and cook in a very low flame for 5 minutes or till the cheese melts.
    • this can be made with left over Naan too
    Note:
    1. You can use any vegetable of your kids choice. Mushrooms, Olives, cubed pineapples can be added.
    2. Even if it is cool the pizza tasted nice. So you can pack for their snack box or lunch box too.
