As i have started the Indian kitchen basics recipes | indian microwave cooking|bachelor recipes, i am getting requests from readers to post some particular recipes. but among the requests few are alreadyin my website Jeyashri's kitchen. So i wanted to make a complied post for the Indian Kitchen basics which i already posted, this week. As i am on a vacation, i thought this week and next week i will post he complied posts, and bring in new recipes from the month of July.

BEETROOT PULAO RECIPE | EASY LUNCH BOX RECIPES

Beetroot- pulao

Beetroot Pulao is a easy and perfect lunch box recipe. My kids generally love to eat beet root. I usually make Beetroot poriyal. For a change just tried beetroot pulao. I added some green peas and frozen corn too. We had this for a week day lunch. As the kids have holidays now, i just went out with them and after we came home i made this easy and simple pulao. It was a super hit at my house and on kids request i made this again. I too clicked the pictures on that day. Do try this for the lunch box and i am sure kids and even adults will love this beetroot pulao a lot.
I have scheduled few posts for the next 2 weeks and few complied posts for weekend Indian cooking basics too. We are going to Chennai for 2 weeks on a vacation. I will not be so prompt in replying mails and please bear with me.

Ingredients
Beetroot pulao

  Preparation Time : 10 mins | Cooking Time :20 mins |   Serves : 2-3


     Basmati rice   1 cup
     Beetroot    1/2 cup (chopped)
     Green peas  1/4 cup(optional)
     Sweet  corn   1/4 cup(optional)
     Mint leaves    1/4 cup
     Coriander leaves  few
     Tomato     1 small
     Onion   1
     Garlic     3 pods
     Turmeric powder  1/4 tsp 
      Red chilli powder   1/2 tsp
      Salt     as needed  
      Oil     2 tblsp     


Beetroot- pulao
Method:
  • Wash the rice  and soak in 1 and 1/2 cup of water for 15 mins. Cut the beetroot into small cubes. 
  • Chop the onions and tomato roughly. Peel the skin of the garlic.
  • In a pan add little oil and add in the cubed onions and tomatoes and garlic.
  • Saute till the become nice golden brown. Add the mint leaves and coriander leaves to this and cook for a minute.
  • Switch off the flame. Allow it to cool.
Beetroot-choppedonion tomato+mint
  • Grind this into a smooth paste. Since it has tomatoes no need to add water.
  • In a pressure cooker, add oil and add in the ground paste.
  • Saute well for few minutes in a low flame. Add red chilli powder and turmeric powder.

  • Add the beetroot , corn and peas(if adding) and saute well. Add salt to this.
  • Add the rice  which we soaked. Do not discard the water. Saute this in a low flame for 5 minutes.

  • Add 1 and 1/2 water to this and cover the lid of the cooker. Let 1 whistle come. Simmer the flame and let be in low flame for 10 minutes.
  • Fluff the rice once the pressure is released.

  • Beetroot pulao is ready to serve. Onion raita is the best combo for this pulao.

NAVRATAN KORMA RECIPE | NAVARATNA KURMA RECIPE | SIDE DISH FOR ROTI

Navratan- korma

   Navratan korma | Navratna kurma is a rich Mughlai gravy. It is slightly sweetish in nature and so  generally we never order when we go out for eating in restaurants. i have few requests for this Navratan korma and i remember watching this recipe in a video too. Though i forgot the source, i noted down(scribbled)  the recipe roughly in my notebook and made this finally last week. It was very tasty . The original recipes includes the addition of pineapple, but i skipped adding it. so the navratan korma was not so sweet as i expected. Try out this easy korma recipe .

Ingredients
Navratan korma

  Preparation Time : 20 mins | Cooking Time : 30 mins |  Serves : 4-5


    Mixed veggies*   1 and 1/2 cups
    Cashew nuts     15
    Raisins      7-8
    Tomato   1-2
    Onion    2
    Garlic   3 cloves 
    Paneer cubes   7-8
    Coriander powder  1/4 tsp
    Red chili powder   1/2 tsp
    Garam masala   1/4 tsp
    Fresh cream    3 tblsp ( You can replace with 1/2 cup of fresh full cream milk)
    Saffron   2 pinches
    Pineapple cubes  1 tblsp ( optional)
    Kasoori Methi    2 pinches
    Oil       2 tblsp
*I used carrot, beans, corn, green peas, cauliflower, bell pepper(capsicum)

Navaratan-korma
Method:
  • Chop the veggies and par boil them in little water. Let it be crunchy. You can even microwave  them for few minutes too. Do not cook the capsicum. If adding  fresh pine apples add along with the veggies and cook them. If adding canned ones add in the last.

  • In a pan add little oil and add the onions (cubed onions) and 8-9 cashews.
  • Saute till they become golden brown. Once it is cool, grind this along with tomatoes into a smooth paste. I added 1 tomato and added little tomato puree too, as i had little of both.

  • Add remaining oil in a pan . Add in the remaining cashew nuts and raisins. Saute them in a medium flame. When they turn golden brown add the cut capsicum and Paneer. Saute in a medium flame

  • Add the parboiled veggies to this and saute for 3-4 minutes.
  • Add the ground paste to this and add the red chilly powder, garam masala and coriander powder.

  • Mix well and let this boil for some time say 5 minutes.
  • Add little water if the gravy is too thick. Since we are adding cashew nuts the gravy will turn thick.
Navratna-korma
  • If you are milk then do not add more water as milk will give gravy consistency. If adding fresh cream add little more water. Do not worry cream will give a nice texture to the gravy. Add saffron and kasoori methi in the last and mix well. boil for a minute, and switch off the flame.

  • Navratan korma is ready to serve.

Note:
  1. I didn't add pineapple as i don't like the gravy too sweetish.
  2. You can reduse the amount of cashews, but authentic navratan korma will be rich.
  3. Kasoori methi is a must, so do not skip. Saffron enhances the flavour so do not miss that too.

ATTA LADOO RECIPE | EASY WHEAT FLOUR LADOO RECIPE

Atta-ladoo
Wheat flour ladoo is a very easy sweet, generally made for diwali or janmashtami or holi festival too. I wanted to try for last diwali itself, but due to lack of time i couldn't post during diwali time. A sudden thought of posting a sweet recipe came and this easy atta ladoo recipe flashed my mind. So without any further delay i made it previous night and clicked the pictures next morning. I followed my Besan Ladoo recipe , but the sugar only i reduced little as one of my friend told that wheat flour atta doesn't need much sugar like besan ladoo.

Ingredients
Wheat flour ladoo

  Preparation Time : 10 mins | Cooking Time :15 mins |   Yields : 11 Ladoos

     Wheat flour | Atta    1 cup
      Ghee (melted)   1/4 cup
      Sugar     1/2 cup
      Cashew nuts    few
      Cardamom powder  a pinch

Method:
  • In a pan add little ghee and fry the cashew nuts till they turn nice golden brown, Keep it aside.
  • In the same pan add the atta and roast it nicely till it gives a nice aroma.
  • Roast in a slow flame. Be careful not to get it burnt. 
  • Transfer the roasted atta  in a wide plate.

  • Powder the sugar. Since i don't have cardamom powder , i powdered 2 cardamom along with sugar.
  • Add this sugar powder to the roasted atta.

  • Melt the ghee in a pan and ensure the ghee is very hot.
  • Add this to the atta, sugar mix and add the roasted cashew nuts.
  • Mix well with a spoon. When it is warm and can handle with dry hands, make this into ladoos.

  • Store it in a clean dry air tight container. This ladoo will stay perfect in room temperature for 10 days.
  • Always handle will clean dry hands.

Notes:

  1. If you feel the mixture is bit dry after adding ghee,melt 1 -2 tblsp of ghee and add it to the flour mixture.
  2. If you don't want to keep this for more days, you can sprinkle few drops of milk and reduce the ghee.
  3. Adding milk will reduce the shelf life of the ladoo.

14 EASY LUNCH BOX RECIPES|INDIAN RECIPES|EASY LUNCH BOX RECIPES

School reopened for most of the Children in India. And as a mom i know how it is challenging for the mothers to decide on what to pack for Kids lunch box. Especially if you have 2 kids it is more tough, as they never match in their eating habits. This i can seen in my own house and with many of my friends houses too. I have compiled the lunch box recipes which i have posted in my blog, so that it will be easy for you all. Will post some more lunch box recipes in the following weeks. Even sometimes you can make this for dinner too as an one pot meal too.
