ADIRASAM RECIPE | DIWALI SWEETS RECIPE

Adirasam Adirasams i made it for the first time. Many of them make for adirasams for Diwali but we don’t have the tradition of making this for diwali.  But i wanted to try my hands on Adirasam. I tried it in my mom’s house when i went in June. My sister’s sil helped me out but unfortunately it was a big disaster. My mom went for  a function in Trichy 2 months back and there she asked the samayal mami the exact proportion and also the nuances of making adirasams. And she tried this in small quantity at home and gave me the exact recipe. Yay i got perfect soft adirasams.
Actually i tried this during Navaratri itself , though i wanted to make again today, i was totally running out of time.


     

Ingredients
Adirasam

  Preparation Time : 1 hour + 12 hours resting timeCooking Time : 30 Mins |   Yields: 6

    
     Raw Rice   1/2 cup
     Jaggery   1/4  cup
    Sesame seeds   1/2 tsp
    Oil     for deep frying
   Ghee   2 drops
   Cardamom powder   2 pinches


Adirasam-recipe
Method:
  • Soak the rice in water for an hour. Drain the water in and just keep it in a vessel which has holes or in a big sieve.
  • Do not spread the rice. Just allow the water to drain and le the rice has moisture content.
  • Make it into a powder in the mixie. Sieve this and keep it aside. The maavu will  slightly have moisture content.

  • Cover the flour and keep.

  • Add jaggery in a pan and melt the jaggery and filter the impurities if any.
  • Allow this to boil till it comes to the soft ball consistency.
  • This is very important, if the paagu will be hard then the adirasams will be hard.
  • If the soft ball doesn’t come this will get dissolved while putting in oil.
  • By putting the jaggery syrup in water it should come like a collective mass and form a soft ball. This is the right consistency.

  • Add this syrup to the rice flour which we made. Add cardamom powder and sesame seeds. No need to roast the sesame seeds.
  • Mix it well. If it is little not firm it is ok. After 12 hours it will be perfect.

  • Keep it covered and let it rest for 12 hours.No need to keep in fridge. Let it be in room temperature.  After that take this and make it into equal sized balls.

  • Take one ball and in a ghee greased zip lock place this and flatten this with your hands. Do not flatten too thin.
  • Take this out carefully and put in hot oil. Keep the flame low. the adirasams will cook very fast.
  • So keep on low.

  • Fry on both sides till golden brown and when done with the help of 2 ladles flatten the adirasam and remove the excess oil. The adirasam may fluff up while frying. No need to worry, by doing like this it will be flattened.

  • Drain in a kitchen towel.
  • Repeat this for the excess dough.

Notes:
  1. Always ensure that the jaggery is in right consistency. If it goes hard or little lesser than soft ball the adirasam will dissolve in oil.
  2. Always use fresh home made flour, store bought flour will not work out for adirasam.
  3. I used bit nice dark colour jaggery. Colour of  adirasam depends on the colour of the jaggery.
  4. If the dough is hard , adirasams will be hard. So ensure that the dough is soft.
  5. Resting  time is more imporatnt. Even 2 days resting also ok.
  6. Resting will give soft adirasams also it will not absorb more oil.
  7. If you feel the dough is too hard add some jaggery syrup again and mix. Ensure that the jaggery syrup must be of soft ball consistency.

SAGO MURUKKU RECIPE| DIWALI SNACKS RECIPES

 Javarisi-murukku

Sago murukku | Javarisi murukku is a different and crispy murukku variety. I tried this murukku 2 months back. Since i was not so satisfied with the clicks, i thought i will make this again and post this recipe of sago murukku. Try this murukku for Diwali 2014, i am sure everyone will be impressed by the taste of this murukku. I got this recipe from my friend's mother in law. I noted it down long back in my old notebook and happened to see this during navaratri. Check out my other diwali snacks recipes

Ingredients
Sago murukku

  Preparation Time : 5 mins+4 hours soaking  | Cooking  Time : 20 Mins |   Yields: 3 cups

     Sago | Javarisi  1/4 cup
     Yogurt     1/4 cup
     Rice flour   1 cup
    Red chilli powder   1 tsp
    Butter     1 tsp
    Hot oil    2 tsp
   Cumin seeds  1/2 tsp
   Asafoetida     2 pinches
   Oil      for deep frying

Method:
  • Soak the sago|javarisi in yogurt for 3 hours. You need to mix it well with hands. After soaking it will be doubled in size.

  • In a wide bowl add the sago mixture, rice flour, chiili powder, cumin seeds, butter, hot oil,salt and asafoetida.
  • Sprinkle little water as needed and make it into a soft dough.

  • Put it into a murukku press and press it into hot oil.
  • It won’t come as full murukku. I tried this 2 times with 2 different murukku achhus. You can use any achu of your choice.
  • I used a new achu with 4 holes.
  • Heat oil and fry and when the oil sound subsides take them out from oil.

  • Drain in a kitchen towel. Crispy murukkus are ready.

  • Store in a airtight container and enjoy the murukkus.

Notes:
  1. Actually in the original recipe aunty told to add green chili paste. If felt that it will be too hot and so added red chilli.
  2. Do not worry about the sago will get struck to the holes in the achu. It will come smoothly.
  3. Just mash it nicely with your hands before adding the flour.
  4. As yogurt is added you can add little more chilli powder also.
  5. If the sagois not soaked properly it will burst in oil. Ensure it is soft

GODHUMAI HALWA | EASY WHEAT FLOUR HALWA | DIWALI RECIPES

After trying the Kasi halwa and Karachi halwa i thought i will try Godumai halwa | wheat halwa at home. I tried the halwa with wheat flour and it turned out pretty awesome. I just jumped out of joy and it tasted exactly like the Tirunelveli halwa which we get in shops. But home made is always best right. So without waiting just go and try this halwa at home. I adapted the recipe from here. Very easy to prepare and no complicated steps. Just have to stir patiently. You get glossy halwa. So go ahead and prepare this Godumai halwa for this Diwali 2014.

Ingredients
Godhumai-halwa

  Preparation Time :10 mins+ 3 Hours soaking | Cooking Time : 45 Mins |   Yields: 3 cups

     Wheat flour   1 cup
     Water     5-6 cups
     Sugar    2 cups
     Ghee    3/4 cup
     Cashew nuts  few
     Cardamom powder  a pinch
     Orange food colour   a pinch

Method:
  • In a wide bowl, add the wheat flour and make it into a dough as we make for chapathi. Do not add salt or oil.
  • Add 5 cups of water to this and soak this in water for 3 hours.

  • After 3 hours mix this nicely with hands and strain the liquid.
  • Add one more cup of water and extract some more milk from the wheat dough.
  • Discard the residue.

  • In a heavy bottomed pan, add 1 tsp of ghee and roast the cashew nuts till golden brown. Keep this aside.
  • Add the extracted water (around 5 cups it came) to the pan and slowly start stirring it. Keep the flame low, high flame will spoil the halwa and will not get cooked.
  • I first put in the normal pan which i use  but since it was overflowing i transferred it to a big non stick pan.
  • After 10 minutes the mixture will be like a porridge and start thickening.

  • Add the sugar now and mix the orange color with 1 tsp of water. Add this orange colour to the halwa. Stir well.

  • Add 2 tblsp of ghee and stir well in a low flame. From now on wards only stirring is the job. Just add the ghee(melted ghee) and add in between. Slowly the halwa will get a glossy texture.

  • Add the cashew nuts and the elachi powder. Stir nicely. The halwa will start coming like a jelly ball without sticking to the bottom.
  • Switch off the gas and if you want you can pour this in a greased plate and cut them into pieces.
  • I want to have this like halwa in a bowl. So didn’t spread in a plate.

Notes:
  1. Only stirring part takes extra time else not much complications in the recipe.
  2. The entire process should be done on a lower flame as keeping on a high flame will spoil the halwa.
  3. Make sure not to get any lumps in the first 10 minutes. So stir continuously in a low flame.
  4. This stay well in room temperature for 2 days and stay well in the refrigerator for a week.
  5. When you want to reheat , just heat water in a vessel and boil it nicely. Switch it off and keep the halwa in a steel bowl and place it inside the hot water. 
  6. It will taste awesome when it is hot.

OATS POTTUKADALAI MURUKKU RECIPE| DIWALI MURUKKU RECIPES

Oats-murukku
Oats pottukadalai murukku is a quite interesting murukku which i came across in Priya's blog. It is very simple and easy murukku. the original recipe has added coconut milk instead of water to make the dough. Since i have already posted Thengai paal murukku for diwali, last year, ithought i will add water only. Ingredients
Oats pottukadalai murukku

  Preparation Time : 10 mins | Cooking Time : 20 Mins |  Yields: 16-18

     Rice flour   1 cup
     Instant Oats   1/4 cup
     Pottukadalai | Chutney dal 1/4 cup
     Butter  2 tsp
     Hot oil  2 tsp
     Sesame seeds   1/4 tsp
     Cumin seeds    1/4 tsp
     Oil   to deep fry
     Salt   as needed

Method:
  • Dry roast the oats for few minutes and make a fine powder. Be careful as oats gets burnt very fast.
  • Powder the pottukadalai too.

  • In a wide bowl, add the rice flour, oats flour,pottukadalai flour,salt, asafoetida, butter,cumin seeds,sesame seeds and hot oil.
  • Add water and make this into a soft pliable dough.

  • Using any murukku press of your choice make murukkus in hot oil. I used thenkuzhal achu.
  • Cook on both sides till the oil sound subsides.

NEI URUNDAI RECIPE|PASI PARUPPU URUNDAI|EASY LADOO RECIPES

Pasi-paruppu-urundai

 Pasi paruppu ladoo | Nei urundai| payathamaavu ladoo is very common in most of the South indian houses for diwali. This is my mom's signature dish. Though it is very simple she will do it very tasty. Both suresh and my sister's husband loves this a lot and she is a typical south indian Mother in law , who happily make for her sons-in-law. Even my mother-in-law likes the way my mom makes this nei urundai. Check out my other easy ladoo recipes.


Ingredients
Nei urundai

  Preparation Time : 15 mins | Cooking Time : 5 Mins | Yields:11

     Paasi paruppu | yellow moong dal 1 cup
     Sugar      3/4 cup
     Melted ghee  1/4 cup + 2 tblsp
     Cashew nuts   few
     Cardamom powder    a pinch


Nei-urundai
Method:

  • Roast the moong dal till the nice aroma wafts from the dal. Be careful not to burn this.
  • Grind this in to a smooth powder. 
  • I had roasted moong dal flour got from India when i visited in june.
  • Powder the sugar and add the flour in a wide bowl.
  • Melt the ghee and roast the cashew nuts and add it to the flour sugar mixture.
  • Mix this nicely with a spoon.

  • Take small portions of the flour mixture and make it into ladoos.

  • Repeat this for the rest of the flour.
  • Store this in a airtight container. This will stay good in room temperature for 4-5 days.

Notes:
  1. If the flour is freshly ground it will absorb less ghee. As mine is ground almost 4 months back it absorbed extra 2 tblsp ghee.
  2. My mom generally put the sugar and pasi paruppu together and grind in the rice mill.
  3. This you can make it and make the ladoos as and when needed.
  4. Do not add water or milk to the flour while making ladoos. It will get spoilt soon.
