THOOL PAKODA RECIPE | DEEP FRIED ONION FRITTERS

   Thool pakoda | Onion Pakoda is a popular snack, though I make it rarely at home, everyone loves it. I personally love to have this with curd rice  though it is a tea time snack. I think most of you will love this curd rice and onion pakoda combo too.

INGREDIENTS:

BESAN | KADALAI MAAVU 1/2 CUP
RICE FLOUR 1/2 CUP
ONION 2 NO.
BUTTER| GHEE 1 TSP
COOKING SODA A PINCH
GRATED GINGER 1/2 TSP
GREN CHILLI 1 NO.
CURRY LEAVES AND CORINADER LEAVES FEW
OIL TO DEEP FRY
SALT AS NEEDED

METHOD:

  • Thinly slice the onions.
  • In a wide bowl, add the rice flour and besan(gram flour) .

  • Using a mortar and pestle crush the green chilly .
  • Add salt, sliced onions,grated ginger, crushed green chilly, curry leaves and coriander leaves( i didn’t add) and ghee|butter .

  • Mix well. Keep it aside for 10 minutes.
  • The water must have oozed out from the onion and normally that moisture is enough to bind the mixture.
  • If want add 1-2 tblsp of water.

  • Heat the oil in a pan for deep frying.
  • Sprinkle the mixture onto the oil and keep the flame medium.

  • Take out from oil once it turns golden brown and the oil sound subsides.
  • Drain in the kitchen towel and repeat for the rest of the mixture.

  • Enjoy with hot filter coffee or tea. These pakoda will be very crispy even after 2-3  hours if you store in an airtight container.
  • Crushed garlic pods can be added to get a garlic flavored pakoda.

GREEN PEAS CURRY RECIPE – DRY VERSION

   Few days ago when i saw the Fresh green peas in the nearby Indian Grocery store, i picked up a small packet and though we always frozen peas nothing can equal the taste of this fresh green peas. I wanted to make this  green peas curry which my mom’s friend makes for us when we were kids. This is a wonderful combo for Garlic Rasam and hot rice.

INGREDIENTS:

GREEN PEAS 1/2 CUP
SHALLOTS 10 NO
COCONUT 3 TBLSP
CUMIN SEEDS 1/4 TSP
SALT AS NEEDED
RED CHILLY 2 NO
GARLIC 2 NO
OIL 1 TSP
MUSTARD SEEDS 1/2 TSP
TURMERIC POWDER A PINCH

METHOD:

  • Take out the peas from the shell.
  • Take out the skin of shallots and chop them finely.

  • Add water in a wide vessel and add the green peas . Add a pinch of turmeric powder and salt to this and cook till the peas gets cooked. This will take approximately 10 minutes.
  • Drain the water, once it is cooked and keep it aside.

  • In a pan add oil and throw in the mustard seeds. When it splutters add the chopped shallots.

  • Grind the coconut, red chilly, cumin seed, and garlic into a fine paste adding very little water.

  • When the onions turn golden brown add in the cooked green peas and the ground masala.

  • Mix it nicely and cook for 2 minutes to  get the masala infused into the peas and check for salt.
  • Garnish with curry leaves.

  • This can be served even with rotis too.

Note:

  1. Cumin seeds can be replaced with fennel seeds to enhance more flavor.
  2. 2-3 shallots can be added while grinding the masala.

MICROWAVE PALKOVA | THIRATIPAL RECIPE

Using condensed milk- ready in 10 minutes – with 3 ingredients Gokulashtami recipes

    When i came to Singapore four years back, my hubby’s friend’s wife sent a box of Thiratipal which tasted awesome and when i called and thanked her and she told me that she made the Thiratipal in Microwave  and she made with condensed milk. Those days i never know that we can search for recipes in Internet and i called her again and noted down the recipe.  After that i tried that once .Later , i totally forgot about the recipe.
Two days back, suddenly i remembered about that recipe and saw in that note book which i have noted the recipe and made it yesterday and since i don’t have Microwave at my place , i went to my friend’s place and made the thiratipal. This got ready in 10 minutes and the taste was too good .

INGREDIENTS:(YIELDS 1 CUP)
CONDENSED MILK 1 CAN(480 ML)
YOGURT 3 TBLSP
GHEE | BUTTER 1/2 TBLSP

METHOD:
  • Grease a microwave safe  bowl, (take a bigger one) with ghee or butter.

  • Open the condensed milk and pour it fully into the bowl and add the yogurt.

  • Keep it in Microwave high for10 minutes and stir in between(every 40 seconds)

  • After 10- 12 minutes this will come to a good thriatipal consistency.

  • Even it is slightly loose don’t bother, it will get thick when cooled down.
  • Mine got done in 12 minutes. the timing differs from each microwave.

Note:
  1. I have seen in a blog that you can add a tblsp of cocoa powder in the beginning and make a chocolate flavored thriatipal.
  2. You can garnish with chopped pistachios or badams .
  3. A pinch of saffron can be added to enhance the flavor.

VELLA SEEDAI | VELLA CHEEDAI RECIPE | GOKULASHTAMI RECIPES

 

  For me preparation of Vella seedai is always tricky and to be more honest it failed me many times either the vella seedai will come too hard or when i put it in oil everything will dissolve in oil. For the past 4 years i have never attempted to make vella seedai and last Saturday a sudden thought came into my mind that i should try making Vella seedai. So I started immediately and the entire process went on well and i clicked stepwise pictures and when the final stage of putting in the oil came, everything went into a disaster!! Yes they all get dissolved in the oil.
   I felt little bad , but i never gave up. Again I made a fresh batch following a few tips from my friend’s mom who is here. To my surprise i got perfect  Vella Seedais and now i can happily say that i can make Vella seedais too!!

INGREDIENTS:(YIELDS- 35 TO 40 SEEDAIS)

RICE FLOUR 1 CUP
URAD DAL FLOUR 1 TBLSP
JAGGERY 1/2 CUP
BUTTER 1 TBLSP
SESAME SEEDS 2 TSP
GRATED COCONUT 1 TBLSP
CARDAMOM POWDER A PINCH
OIL FOR DEEP FRYING
VELLA SEEDAI
METHOD:
  • Roast the rice flour  in a dry pan on low flame . Be careful not to change the colour. Roast for 1-2 mins.

  • Sieve this flour and roast it again.
  • Repeat this process twice.
  • Be very careful not to over roast the flour by changing the colour.
  • Keep it aside.
To make Urad dal flour:
  • Dry roast 4 tblsp of urad dhal in a pan.
  • Just roast till golden brown.
  • When it is cool, make it a fine powder in a mixie.
  • Sieve the flour twice.
  • Keep the flour in a airtight container till you use.
To make Vella Seedai:
  • In a dry pan roast the sesame seeds and grated coconut till they become golden brown colour.

  • In a wide bowl add the roasted rice flour and urad dal. Add the roasted sesame seeds and butter.

  • In a saucepan add the jaggery and add 2 tblsp of water to this.
  • Melt the jaggery and filter the impurities.
  • Add a pinch of cardamom powder and boil till it comes to a rolling boil.

  • Switch off the flame and slowly add this to the flour mixture and mix this gently with the spoon.
  • Make it into a pliable tight dough.

  • Either you may end up in leaving a few tblsp of jaggery water or you may tend to add 2-3 tblsp of water to make it a tight dough.
  • I added 2 tblsp of water to make it into a dough.
  • Roll them into a small balls( slightly bigger than uppu seedai)
  • spread them in a Kitchen towel or a newspaper as it will absorb the excess moisture.Let this sit for 10minutes.

  • Heat the oil for deep frying.
  • Slowly drop the seedai balls in oil in small batches.
  • Do not add too much in oil at a time.

  • Keep the flame in medium low else it will not get cooked inside.
  • When it becomes nice brown color take out and drain in the kitchen towel.
  • Repeat the same process for the rest of the dough.
  • When it is completely cool store this in a airtight container.
  • It is common to get cracks in vella seedai after it is fried.

Tips for making perfect vella seedai:
  1. Always roast the flour and sieve them twice. This will avoid the seedai from bursting.
  2. If the jaggery is too much and the dough is little soft the seedai will dissolve in oil once you drop them.
  3. So always ensure that the dough is tight. Even you are left with a few spoons of jaggery water doesn’t matter.
  4. Never skip to roast the sesame seeds and coconut.
  5. I used the store bought rice flour. You can wash and soak the raw rice for 1- 2 hours and dry them in a towel and make flour out of this.
  6. Always cook the seedai in low flame so that it will be cooked from inside too.

    ALOO MUTTER MASALA | SIDE DISH FOR ROTI

    POTATOES AND GREEN PEAS MASALA(GRAVY)

      Last week when we went to a nearby Indian Restaurant for dinner , we decided not to order for any paneer dish and finally ended up in ordering Aloo mutter gravy. Suddenly my hubby asked me whether i have aloo mutter recipe in my blog and i said no. then the following week i made this enjoyed with rotis. This recipe i learnt my cousin Kirthika, from whom i learnt the recipe of Pav bhaji ,who is an expert in cooking. I still can’t forget the taste of the aloo mutter which she cooked for me when was pregnant with my second baby.

    INGREDIENTS:

    POTATO 2 NO
    GREEN PEAS ( I USED FROZEN) 1/2 CUP
    ONION 1 NO
    TOMATO 2 NO
    CINNAMON 1 SMALL PIECE
    CLOVES 2 NO
    OIL 1 TSP
    CORIANDER POWDER 1/2 TSP
    RED CHILLI POWDER 1/2 TSP
    CUMIN SEED POWDER 1/4 TSP
    GARAM MASALA 2 PINCHES
    SALT TO TASTE
    ALOO MUTTER

    METHOD:

    • In a pressure cooker, add oil and throw in the cinnamon and cloves.
    • Chop the onions and tomatoes. Peel the skin of the potato and cut into cubes.

    • Now add the chopped onions.
    • Saute till they turns pink.

    • Add the chopped tomatoes and saute till they turn mushy.
    • Keep the flame in medium.
    • When done add the coriander powder, red chilly  powder, cumin powder and garam masala.

    • Saute for a while and add the cubed potatoes and green peas.

    • Add 1to 1 and 1/2 cup of water and add salt.
    • Close the lid of the pressure cook and cook till 3 whistles.

    • Garnish with coriander and serve hot with chapathi | jeera rice.

    Note:

    • Ginger garlic paste can be added. If adding add it in the first after putting cinnamon and cloves.
    • You can puree the tomato and onion in a mixer and add, if you want a smooth texture.
    • Fresh green peas can also be used instead of frozen peas.
